Fermentation of Ferulated Arabinoxylan Recovered from the Maize Bioethanol Industry

Maize by-product from the bioethanol industry (distiller’s dried grains with solubles, DDGS) is a source of ferulated arabinoxylan (AX), which health-promoting polysaccharide. In present study, AX DDGS was fermented by representative colonic bacterial mixture (Bifidobacterium longum, Bifidobacterium adolescentis, and Bacteroides ovatus), effect (AX-f) on proliferation cell line Caco-2 investigated. efficiently metabolized these bacteria, as evidenced decrease in polysaccharide molecular weight 209 kDa to < 50 AX-f, release ferulic acid (FA) chains (1.14 µg/mg AX-f), short-chain fatty acids (SCFA) production (277 µmol/50 mg AX). AX-f inhibited cells 80–40% using concentrations 125–1000 µg/mL. This dose-dependent inverse attributed increased viscosity media due concentration. The results suggest that dose range SCFA free FA are key determinants antiproliferative activity. Using same concentrations, non-fermented only 8%. These findings highlight potential recovered maize an agent once bacteria.
